Company's Coming Casserole

It has been forever since I've written because my wonderful mother and stepfather, Todd came in town, yay! So, I cooked, cleaned, and took them to all kinds of places in Pensacola. We had a blast. Sookie got all clean and smelled like cotton candy. She was perfect. So, this recipe is one for when company is coming and you want to make breakfast but you don't want to get up super early. Although these days, Patrick and I do that regardless...but it gave us time to watch some Saturday morning tv together which is a delicious treat. Just like this casserole. This is a family recipe from my Mother and she also makes it every Christmas morning. You'll need to make it the night before, cover it, and leave it overnight. Then put it in the oven at 350 degrees for an hour and 15 minutes.

Make this part the night before:
1 lb sausage
6 eggs
6 slices of bread
1 8 oz block of cheese (I use mild cheddar but sharp works well too)
2 cups of milk
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard

a 9X13 casserole dish

1. cook sausage until brown and crumbled, set aside
2.Grate the block of cheese on a sheet of wax paper and set aside
3. cut up slices of bread into cubes
4. beat eggs in a bowl
5. add milk to eggs
6. add salt, pepper, and dry mustard to eggs
7. in a casserole dish layer sausage, bread, cheese, and cover with egg mixture
8. repeat layers
9. cover and refrigerate overnight

In the morning:

1. preheat oven to 350 degrees
2. cover casserole with aluminum foil and bake for an hour
3. take casserole out, uncover, and bake 15 more minutes
4. let sit for 5 minutes before cutting and serving


I love this casserole. So, this week may not have a lot of recipes because I am sidelined with an arthritis flare and I'm under strict orders from Patrick to stay in bed...like that will happen. I will try my best though :) soon I'll be focusing on some healthy cooking...because Patrick will be doing a lot of swimming soon.
