So, here's the lowdown on my day...I played with kittens, I cleaned the house, I looked over Mary Kay, and I made a quick (and I mean quick) supper. The BEST news about this supper?! It was super healthy. Let me give you the highlights.
Salmon Supper:
2 caprese salad appetizers
tomatoes
buffalo mozzarella
fresh basil
balsamic vinegar
olive oil
salt and pepper (if needed)
1 package of frozen sockeye salmon (this is a good deal because you can get 2 pieces for around 9$ when normally you'll pay 8 for 1 in the case)
salmon rub (we used a kind from Central Market because my sainted Mother mails it to me...but honestly you can make a really yummy salmon with a recipe I'll leave at the end of this)
Lemons
1 head of broccoli (or 1/2 for 2 people) cut and put into steamer bags
top with lemon and serve...yummy and healthy
We added a Kraft Parmesan Macaroni and cheese (which isn't very healthy but Patrick asked for it) but normally I'd serve this with either brown rice or rice o roni (because I love it)
Here's a good substitute for a rub
salmon
1 lemon sliced
1 tbsp of capers
1 sprig of rosemary
Put salmon in a tin foil pouch cover with ingredients and bake at 350 degrees for 20 minutes or until salmon is flaky
