So there's this song I love by Maroon 5 called "Sunday morning" and it starts out "Sunday morning rain is falling, steal some covers, share some skin" obviously, it's Tuesday so none of these things are options. However, it is Tuesday evening and rain is falling so I'm writing this lovely blog. My amazing and amazingly busy fiance is unloading and reloading the dishwasher and I'm putting up tonight's supper which is a crockpot recipe that is SO EASY. It's my white bean chicken chili and let me tell you friends...I love it. So, as the rain falls and I watch Glee (while Patrick groans that he ate too much chili and skillet corn bread in the background...) here's my recipe.
White Bean Chicken Chili
1 can/cup chicken broth
1 can cream of chicken soup
1 can hominy
2 cans northern beans/white cannelini beans
boneless skinless chicken breasts (or chicken tenders)
1 package taco seasoning
sour cream (for topping)
1. Mix together broth, soup, and taco seasoning
2. Pour into crockpot
3. add raw boneless skinless chicken
4. drain and rinse beans and hominy
5. add to soup mixture and stir
6. set on low and cook 8-10 hours or high and cook 4-6 hours
7. serve with skillet cornbread and 1 dollop sour cream
serve with skillet cornbread:
1 1/4 cup flour
3/4 cup cornmeal
2 tsp baking powder
1/2 tsp salt
1 tsp sugar
2 eggs beaten
1 cup milk
1/4 cup vegetable oil
1 cast iron skillet
1 tbsp butter
1. turn oven to 400 degrees
2. put 1 tbsp butter in skillet
3. once oven has reached 400 degrees put skillet in oven until butter is melted
4. combine all other ingredients
5. pour mixture into skillet
6. place skillet in oven for 15-20 minutes or until a knife inserted in the cornbread comes out clean
7. cut and serve with white bean chicken chili
My only advice for this recipe...do not let husbands/fiances over eat it because they will complain. As mine is currently doing...in his office...oh dear. I guess these are the punishments of making delicious food.
